GreggFraser – General Manager

Gregg began his illustrious career in the food service industry back in 1978 at the Sizzler Steak House at O’ahu’s Koko Marina. By the 1990’s his passion saw him owning his first bar and restaurant, known as Hernando’s Hideaway in Waikiki, before spending a decade in the hotel industry as General Manager and Food and Beverage Manager at the Hotel Molokai in Kaunakakai. By the beginning of 2015 he had been appointed as Executive Director of the Hawaii Restaurant Association and during his four year tenure he introduced the ProStart program to Hawaii, and was the driving force in creating the 501 c 3 non-profit Hawaii Restaurant Association Educational Foundation.

Today Gregg is co-owner of Hospitality Training Hawaii, a locally-owned and operated company which trains management and customer service staff in the Foodservice and Hospitality Industries. He also owns the Opakapaka Grill and Bar on Kauai’s North Shore and is the General Manager of two restaurants in the Symphony Condominium and Velocity Honolulu luxury auto complex – Italica Bar and Café, and Viaggio Honolulu – featuring Italian-inspired fine dining.


ChefRodney Uyehara – Executive Chef

Chef Rodney is former Executive Chef of The Bistro at Century Center, The Beach House at the Moana Surfrider Hotel, and Blue Note Hawaii at Outrigger Waikiki Beach Resort. Chef Rodney is a perfectionist always striving to do better. He puts all his passion into everything he does because, in his words, “If you love what you do, you will never work a day in your life.”
Today, he continues to delight diners with his new Italian-inspired with Hawaiian Flair culinary creations at Viaggio Honolulu.

Ben has been in Food and Beverage business for 50 years and has managed a number of renowned Hawaii restaurants including , Nick’s Fishmarket, the Black Orchid, Matteo’s, the Third Floor and Rex’s Restaurant.


JaredBrown – Beverage Service Manager

After a decade’s experience in many of the major U.S. mainland restaurant chains, Jared moved to Hawaii and fell in love with the beauty of the islands and the people. Jared’s entire career has been spent gaining experience in fine dining, from small restaurants to the 5-star diamond, world-renowned Four Season Hualalai. He has also worked at the flagship restaurants of three of Hawaii’s local and legendary chefs – Peter Merriman, Ippy Aiona, and James Babian.
